This qualification gives supervisors, team leaders, managers and anyone else with supervisory responsibility for food safety within a catering business, the essential knowledge they need to supervise food safety.
COURSE OUTCOMES
Learners will gain the following critical knowledge to apply at work:
• Understanding the role of the supervisor in ensuring awareness of, and compliance with, food safety legislation within the business
• Understanding the application and monitoring of good hygiene practice. E.g. temperature controls, pest control, personal hygiene, cleaning and waste disposal, and the design of food premises and equipment
• Understand how to implement food safety management procedures. E.g. identifying hazards, controlling them, and monitoring, recording and evaluating risks and control procedures
• Understand the role of the supervisor in staff training. E.g. providing on-going training and creating effective communication
